A kind of beef · also called rib eye steak, rib eye, scotch fillet, entrecôte
About
A boneless cut of beef from the cattle rib section that is slightly denser than water.
Ribeye steak has a density of about 8.75 ounces per US cup (1.05 grams per milliliter). Because it consists mostly of water and muscle fibers mixed with fat, it is slightly denser than liquid water and will sink. A typical 8-ounce (227-gram) portion takes up about 0.91 US cups (216 milliliters) of space. It occupies nearly the same volume as other fresh meats and whole eggs of equal weight.
From Wikipedia
The rib eye or ribeye is a boneless rib steak from the rib section of cattle, though occasionally other animals will have cuts described as ribeye, such as deer. The cut is popular for cuisines around the world, with French language butchering describing a similar entrecôte steak, and Latin American cusines having similar concepts, like ojo de bife in Argentina and lomo vetado in Chile.
