About
Powdered erythritol is a finely ground sugar substitute that weighs about 5.0 ounces (142 g) per cup.
With a bulk density of about 5.0 ounces per cup (0.6 g/mL), powdered erythritol holds a lot of trapped air between its fine particles. Because of this airy texture, an equal weight of the powder takes up much more kitchen volume than granulated sugar or coarse erythritol crystals. It measures similarly to confectioners' sugar, making it easy to swap into recipes where fine, powdery texture is needed.
