About
Instant yeast is a granulated leavening agent that weighs about 4.6 ounces (130 g) per cup.
Instant yeast consists of small, dried granules of single-celled baker's yeast. It has a bulk density of about 4.6 ounces per cup (0.55 g/mL), leaving air spaces between the individual grains. A standard 0.25-ounce (7 g) packet takes up about two and a quarter teaspoons of space. This means yeast packs more lightly than sugar and takes up roughly twice the volume of table salt for the same weight.
From Wikipedia
Baker's yeast is the common name for the strains of yeast commonly used in baking bread and other bakery products, serving as a leavening agent which causes the bread to rise by converting the fermentable sugars present in the dough into carbon dioxide and ethanol. Baker's yeast is of the species Saccharomyces cerevisiae, and is the same species as the kind commonly used in alcoholic fermentation, which is called brewer's yeast or the deactivated form nutritional yeast.
