About
Grated parmesan is an aged, hard Italian cheese whose loose shreds weigh less than half the weight of water.
With a typical bulk density of roughly 3.5 ounces per US cup (0.42 g/mL), grated parmesan traps a lot of air between its dry, hard particles. A solid wedge of this aged cow's milk cheese is dense, but grating it more than doubles the volume it takes up. It sits looser and lighter in a container than softer cheeses like shredded mozzarella or cheddar, which clump together more tightly.
