About
A cabbage cultivar grown for small edible buds that pack loosely into measuring cups.
Brussels sprouts belong to the Gemmifera cultivar group of cabbages and grow as small, edible buds. Because the buds are round and leave open air spaces in a container, their bulk density is about 32.5 pounds per cubic foot (0.52 grams per milliliter). This makes them about half as dense as water, which fills containers without leaving air gaps. Shredding the sprouts reduces the empty pockets and allows more weight to fit into the same volume.
