About
Shredded coconut is grated fruit meat that packs loosely, weighing far less per cup than flour or sugar.
With a bulk density of roughly 22 pounds per cubic foot (0.35 grams per milliliter), shredded coconut takes up substantial space for its weight. A full quart (about 0.95 liters) weighs only about 11.7 ounces (333 grams). In the kitchen, it occupies more than twice the volume of granulated sugar of equal weight because the flakes do not settle tightly together.
From Wikipedia
The coconut is a member of the palm family (Arecaceae) and the only living species of the genus Cocos. The term "coconut" can denote the whole coconut palm tree or the large hard fruit.

Quick answer
One US cup of shredded coconut weighs about 2.9 ounces (83 grams). That is less than one-third the weight of a cup of water, as the coarse shreds trap a lot of air.
