About
The leek is a layered vegetable cultivar whose chopped stalks pack loosely due to trapped air.
Leeks are biennial vegetables bred from broadleaf wild leeks and grown for their tightly bound leaf sheaths. When chopped for cooking, they have a bulk density of roughly 24 pounds per cubic foot (0.38 g/mL). Their curved, overlapping layers trap air, causing them to occupy much more volume than solid root vegetables of the same mass. A measure of chopped leek floats easily in water, settling with a loose pack similar to raw sliced onions.
