About
Kale is a leafy cabbage cultivar that packs loosely, weighing about 2.1 ounces (59 g) per cup.
Chopped kale has a bulk density of about 15.6 pounds per cubic foot (0.25 g/mL), which is about one-fourth the density of water. Its ruffled and irregular leaves trap large pockets of air, preventing the pieces from settling closely together in a container. Because of this, a one-quart container holds only about 8.3 ounces (236 g) of raw leaves. This makes it far lighter by volume than solid produce like carrots or closely packed wet greens.
From Wikipedia
Kale, also called leaf cabbage, belongs to a group of cabbage cultivars primarily grown for their edible leaves, but it is also used as an ornamental plant. Its multiple different cultivars vary quite a bit in appearance; the leaves can be bumpy, curly, or flat, and the color ranges from purple to green.
