About
Cauliflower rice is finely grated raw cauliflower that takes up about twice the space of water by weight.
Cauliflower rice has a typical bulk density of roughly 4.2 ounces per cup (0.5 grams per milliliter), so air fills much of the container around the grated bits. It is made by chopping or grating the curd, which is the edible head of cauliflower, a cultivated variety of the species Brassica oleracea. Compared to cooked white rice, raw cauliflower rice weighs considerably less per cup because the irregular vegetable fragments do not pack together tightly. A one-pound (454-gram) batch will fill nearly four cups of volume.
