About
Semolina flour is a coarse durum wheat flour that packs slightly heavier than standard all-purpose baking flour.
Semolina flour has a bulk density of roughly 44 pounds per cubic foot (0.7 g/mL). Because it is coarsely milled from hard durum wheat, its granular particles settle with less trapped air than finer flours. A common 2-pound (0.9-kilogram) bag takes up about 5.5 US cups of shelf space. It is denser than powdered flour, though it remains lighter by volume than granulated sugar or table salt.
