A kind of coffee · also called soluble coffee, coffee crystals, coffee powder
About
Instant coffee is dehydrated brewed coffee whose airy crystals weigh far less by volume than standard coffee grounds.
Instant coffee has a low bulk density of about 18.7 pounds per cubic foot (0.3 grams per milliliter). Spray-drying and freeze-drying create porous granules that trap pockets of air, making the granules take up a lot of space for their mass. Because of this airy structure, an entire 8-fluid-ounce (240-milliliter) cup holds only a small fraction of the weight found in denser pantry staples like ground beans or salt.
